Djion Mustard Pork with Apples

Serves 4

1 tbspn Olive Oil

3 Green Apples.peeled, cored & cut into thick wedges

500 g Pork Fillet, cut into rounds

200 ml Chicken Stock

1 Tblspn Djion Mustard

1 Tblspn Chopped Sage Leaves

2 Tblspn light sour cream

300 g Steamed Beans. steamed to serve

1. Heat half oil in a large frying pan on medium heat. add apple and cook, stirring for 10 mins, until caramelised and soft.Transfer to a bowl set aside

2. Heat remaining oil in same pan on med high. Cook pork either side for 2 mins each side until browned. Add stock and mustard and bring to boil. Reduce heat and simmer,uncovered for 5 mins, until pork is cooked through.

Return apples to pan along with sage. Simmer for 1 minute until heated & combined Remove from heat stir in sour cream. serve with beans and mashed potato.
