Dry skin of roast, rub with salt, roast @ 250c for 20 mins, reduce to 180c & roast for 55 mins per kilo-cover with foil & rest for 20 mins.
Try baking some fresh fruit with your pork, Pears, Apple, Apricots. Once baked cool & puree to make a sauce to serve with pork
